Ingredients:
- 1 cup rice, cooked & cooled
- 3 green onions, julienned
- 1 carrot, shredded
- 1/2 cup frozen peas
- 2 eggs, slightly beaten
- soy sauce, to taste
- shrimp or chicken (optional)
Add 1 tsp of oil to stir fry pan or wok.
Pour egg into heated pan & cook. Take out & set aside to cool, then roll up & shred.
Add another tsp of oil to pan. If using uncooked shrimp or chicken, cook now and set aside.
Add another tsp of oil & saute green onion, carrot & peas. Don’t overcook.
Add another tsp of oil, mix all ingredients with rice & heat in pan. Add soy sauce & mix.
